Spinach Dip

It's Food Friday!

I'm not really into sports that much. For me, it's a chance to throw a game night party with all sorts of appetizers. One of my favorite things to serve is spinach dip. I happen to love spinach. I have a salad almost everyday made with spinach leaves, Newman's Own Olive Oil & Vinegar, 2 slices of turkey bacon, and a chopped up cheese stick. I don't even remember eating spinach as a kid. Maybe that's why I like it now, because it wasn't forced upon me. But, this dip is so good, that I'm forcing you to make it. Seriously. Make. Eat. Enjoy.

1/2 cup chopped red onion
2 10 oz pkgs frozen spinach - thaw and squeeze out excess water
1 8 oz pkg cream cheese
1 8 oz container of sour cream
1 6 oz pkg parmesan cheese
salt and pepper

Coat skillet with cooking spray. Saute onion over medium heat, about 5 minutes. Add spinach. After 1 or 2 minutes, add cream cheese and stir until melted. Stir in sour cream and parmesan. Season to taste.

I am a retired Professor. My wife (for over twenty years) is a busy registered nurse. She is considerably younger than I, which sometimes makes it a bit difficult keeping up with her . . . but I LOVE trying!

My wife's favorite food is spinach.

She can eat a whole bread bowl of spinach dip herself. Here she is at our favorite restaurant: http://www.tripadvisor.com/MemberPhotos-a_uid.5406690-w2#1654233

I plan to surprise her with your spinach dip this week. It looks scrumptious!

I'll let you know how she liked it.
