It's Food Friday!
I stole this recipe from my sister, but since I changed a few things I'm calling it Angie's Chili now. The biggest difference is that I don't add the ground beef. My boyfriend once told me that I might as well be a vegetarian. I usually don't eat meat Monday through Friday, since I don't like dealing with it raw. But, on the weekends, I will gladly sit and be served burgers, tacos, and boneless chicken wings. Just as long as I don't have to fix it, I'm fine.
So take this chili recipe and add, delete, make it your own!
1 medium onion, chopped
1 tbs chili powder
1 tsp cumin
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) red kidney beans, rinsed and drained
1 can (15 oz) white kidney beans, rinsed and drained
1 can (15 oz) diced tomatoes
1 can (15 oz) tomato sauce
1 can of water
Spray a big pot with cooking spray and saute onions on medium heat. Add everything else and once it starts boiling, turn down heat and simmer for 10 minutes or so. Easy!

Yeah, I love pasta nights at our house because I don't have to deal with handling raw chicken/beef. Ugh!

Except for Joe the rest of us could probably be vegetarians, too. I'm not crazy about messing with meat either especially chicken. I use my tongs!
