April 11, 2012



I invited all of my in-laws over on to my house on Easter for a pot roast dinner. I was really looking forward to it, until someone asked if they could bring ham. I don't like ham. And this isn't a potluck. But, that's exactly what it turned into. People brought devilled eggs, scalloped potatoes, corn, sweet potato casserole, and rolls that I ended up having to bake myself. Of course, I didn't make my pot roast so I had to change my side dishes. I made broccoli cheese casserole and green bean casserole. It was good food, but not what I had planned at all. I also found out that the people that brought ham, didn't come to our last Easter shindig because we grilled burgers and hot dogs. And by the way, they didn't cancel, they just didn't show up.

And as many things as people brought, they didn't bring dessert. That's ok, I think anything would have had a hard time competing with the cake I made. It was a sour cream coconut cake and it was delicious. I really like the fact that this cake is supposed to be made a few days ahead of time. It makes things easier if you're serving it at a get-together. Not that I will be having a get-together ever again.

Sounds like a great party! I wish I had extended family close enough to share this sort of thing with on the holidays. My family is 4 against 1-Husband and 3 sons. I'm stuck with planning,shopping,cooking and clean up. I want daughter-in-laws! I want to bring a dish and enjoy the party! Beautiful cake!
